Powerful Assyrtiko from the leading lights of winemaking on Santorini - barrel fermented, low yield centenary vines
Established in 1996 on vineyards abandoned after the 1956 earthquake, the late Haridimos Hatzidakis brought the experience of being Boutari's chief winemaker to Santorini. He put Santorini Assyrtiko on the map as a unique, unforgetable, fine wine.
Nykteri is a traditional white vinification type. Over matured handpicked grapes are placed in a cold room overnight, then destemmed grapes remained in skin contact for 12 hours. The must is fermented with indigenous yeasts at 18˚C. The wine is matured in oak barrels of different capacity for 12 months.
Tasting Note: Yellow golden colour. Aromas of ripe stone fruits, oriental spices and minerality. Great structure with an excellent balance of acidity and tannins.
