A light and bright version of Xinomavro, immensely juicy and refreshing, with minimal intervention
The always-inspiring Apostolos Thymiopoulos delivers an easy-drinking and light wine with no sulphur addition. Made from a parcel of Xinomavro old vines, 60% of the harvest is produced in whole grapes. A 30-day maceration and fermentation with indigenous yeasts precede six months of aging in barrels, followed by bottling without filtration. Tonic attack, textured mouth and aromas reminiscent of strawberry, spices and bay leaf. Wonderful!
This domaine situated in northern Greece in the Naoussa region is managed by Apostoles Thymiopoulos and cultivated organically. The most venerable vines on the domaine are 130 years old and the indigenous Xinomavro grape variety is given pride of place in various cuvées from this highly reputed domaine.
Tasting Note: A light and bright version of Xinomavro, immensely juicy and refreshing, made to drink young. Strawberries and tomatos on the nose, fruit driven palate.
