Very smooth and fruit driven Margaret River Cabernet, with velvety tannins and complex flavours.
Situated in 110ha of prime Margaret River vineyards, Xanadu is also rated 5 stars by James Halliday and produces high-scoring Cabernet, Chardonnay and Semillon/Sauvignon blends. The fruit is crushed, de-stemmed and then fermented in a combination of static and rotary fermenters for 5-7 days. Approximately 20% of the juice undergoes a pre-fermentation cold soak, with another 20% being left for a period of extended maceration on skins for 28 days. The various batches undergo malolactic fermentation in tank and barrel before 14 months’ maturation in a selection French oak barriques (20% new oak).
Tasting Note: Packed full of juicy fruits of the forest, cassis and dark chocolate. This wine is full-bodied with a persistent finish.
